Wild Garlic, nettle and potato soup

 

At this time of year when the wild garlic is coming up and the nettles too it's time to make a Spring soup that is so good for you and so easy.

In your soup pan in a little oil soften a chopped onion, then add a garlic clove and then add cubes of potatoes, add stock either chicken or veg cook until the potatoes are starting to fall apart. Turn the heat down to as low as possible and add some washed wild garlic and some nettle tops and cook for about another fifteen minutes. Cooking at the low temper ensures the nutrients in the plants aren't destroyed. 

Allow to cool slightly and add half a cup of milk or cream, then blend, check for seasoning and serve.
