Parmesan Omelette

 

Sometimes less is more and this beautiful brunch ticks the boxes, air fried bacon and asparagus, and a few tomatoes on an omelette, as simple as that, but when the omelette has a coating of Parmesan it's special.

So this is about a technique, warm a small frying pan and add half a cup of grated Parmesan and leave for a few minutes on low whilst you beat a couple of eggs, the cheese will start to appear as the pic and may slightly brown, pour over your eggs, allow to slightly set and then fold over and serve as above.
