Portuguese Green Soup (Caldo Verde) Recipe

 

A national dish from Portugal this incredible soup features kale, potatoes, onions and Linguiça sausages that you bought at Lidl and never knew what to do with. Packed with flavour and nutrients Caldo Verde served on special occasions to Afonso, Duarte and all, including Beatriz. Portuguese children I assume overcome a fear of green stuff at an early stage.

To make a pan like the above all you need is cavolo nero kale, why Tescos didn't have fresh whole kale at Dumfries is beyond me, are people so lazy that they buy chopped veg...

Kale
Couple of spuds
Onion
Sausages
Stock cube
Seasoning


Method

Thinly slice the sausage and fry in a little oil for about five minutes, they will release some delicious oil, take them out and set to one side.

Add to the sausage oil in the pan finely chopped onions and soften. Add thin slices of potatoes, a stock cube and water, simmer until the potatoes start to fall apart, use a potato masher and squish till lump free.

Next add your sausages and chopped kale and simmer for about 45 mins or until it is really soft.

It would be usually served in a bowl known as a 'tigela' probably not much different to the bowl shown in the photo.
