Wild Garlic (Ramsons) and Potato Soup Recipe
Wild Garlic also known as Ramsons is emerging and starting to grow with abundance beside our lanes and bridle paths in the Lakes, when you walk passed it the aroma will make you wonder about Ramsom recipes. This I admit is the first time I have used Wild Garlic as an ingredient, and this soup whilst simple packs flavour. When cooked Wild Garlic is not overly garlic, it's not bitter and the flavour is perfect with potato. If I served this soup with some great bread with some cream cheese and a Wild Garlic Pesto, and a bottle of local beer... mmm I think that would go down well.
Ingredients:Fifteen or so Ramson leaves
A few potatoes
A shallot
Garlic Clove
Parsley
Milk or cream
Chives, if yours have come up, to decorate
Method
Put some potatoes on to boil until cooked and soft.
In a frying pan heat some oil, I use rapeseed, and gently fry the chopped shallot and garlic until clear but not browned. Then add your Ramsom leaves and parsley, stir about for a minute. Then add to the pan with your potatoes in (maybe drain a bit). Then using a stick blender, blend till smooth, do not over blend as the potatoes will go gloopy.
Return to a gentle heat, season, add some milk or cream and serve.
