Best ever rice wine vinegar vinaigrette - salad dressing
My partner prefers potato salad with mayo but this is delicious too. So next time you see rice wine vinegar buy some and you'll find you use it in your cooking much more than any other vinegar. I use rice wine vinegar all the time in any stew or dish including salad dressings, rice vinegar is not as strongly flavoured as any other vinegar and as it is clear it will lift your dishes without adding any colour.
Simply combine some rice wine vinegar with half the amount of olive oil and a little lime or lemon juice, a teaspoon of Dijon type mustard, a drop of light soy, a drop of sesame oil in a jam jar and give it a shake. Adjust and season till you find the flavour you want.
Gently cook some spuds and add whatever you like, serve warm and enjoy.
