How to make PASTA al LIMONE Like an Italian (Lemon Pasta Recipe)

 

PASTA al LIMONE

Bring the flavour of the Amalfi Coast or Sicily to your table.  Pasta al Limone is a perfect primo platter or quick lunch especially if served in the heat of a halcyon Summers day. 

Just a lemon, spaghetti, Pecorino and some mint, a bit of technique and that's it, that's all.

So put your pasta on to boil, in a frying pan put a little olive oil, add the zest of a lemon to it and heat, when hot add a ladle of pasta water, squeeze your lemon and add half the juice and put the lemon halves into the pan, add fresh mint leaves and their stalks. Simmer.

Mix the remaining lemon juice with some grated Pecorino. When your pasta is a couple of minutes away, fish out the mint and remove the lemon halves. Add the pasta and a little more pasta water to the sauce, add the lemon juice and cheese, add more chopped mint leaves, simmer and mix. The sauce will reduce and become more creamy as in the above picture.
