How to make - Chinese Chicken with Air Fried Roasted Cashew Nuts

 

Chinese Chicken and Cashew nuts, an easy stir fry, well they all are. And when you're ready to wok, then let's wok. Singalong. 'wok this way, say wok this way'.

Anyway start with flavours of fresh chilli, fresh garlic and slices of fresh ginger infused in hot rapeseed oil. 

Then add strips of chicken marinated in light soy, stir fry with sliced peppers and onions. Swiftly followed by roasted cashews, pak choi, then a splash of sesame oil and then finished with a sauce consisting of chicken stock, dark soy and oyster sauce.

Serve over Basmati rice. Decorate the dish with more salted soy cashews.

Roasting nuts in an air fryer is easy and quick.

I just rolled the cashews in dark soy and put them on tray and sprinkled them with salt then put them into the air fryer for a few mins at 180, turning the nuts over after a few minutes. 

If you are going to have a go at roasting soy flavoured cashew nuts in the air fryer I would recommend not letting anyone else know as you may not have any nuts left at the end. Erm I started with a full tray...
