Homity Pie

 Homity Pie, a dish from WW2 consisting of spuds, cheese, onion, maybe a leek, possibly an apple, within a pastry case could be made from rations, said to be popular with the 'Land Girls' Women's Land Army (WLA) and may of been in one of their recipe books. Also it is said to have originated in Devon, known as Devon Pie. 

Cranks Vegetarian Restuarant tho brought it to fashion in the sixties. The recipe does not appear in any cookbook that I own from the fifties and sixties which makes you wonder. Either way filling and inexpensive it's good hot or cold.

Make some shortcrust pastry, for the above 4oz flour, 1oz butter and lard, chill for at least half an hour then blindbake for twenty mins.

Filling:-

So boil a few spuds, and soften an onion and leek in butter, add crushed garlic and some herbs. Mix with roughly mashed potatoes, a beaten egg, a pinch of nutmeg, seasoning, and half the cheese. Put the remaining cheese on top, cover with foil and bake for forty minutes. Uncover at the end to brown the top.
