Gazpacho Verde

 


Sun cracking the flags? Then make the best cold soup. This like it's red cousin is a Spanish Gazpacho, an amazing taste and a colour only normally available to those with a paint mixing machine.

So what ingredients, well a cucumber (peeled), a garlic clove, a green pepper, spring onions, an apple (peeled) lots of basil, some mint, seasoning and rice wine vinegar. Combine and blitz till smooth. Leave for a while in the fridge and then strain and push through a sieve.

Serve very cold.
