Patate e Pomodori al Forno
Yes lovely baked potatoes with onions, cheese and tomatoes, may not be a thing of beauty, but this is a 'Prince' of a potato dish that even a pauper can enjoy. Further down the blog is another version that I make, but I think this is better and goes practically with anything.
So a layer of thinly sliced onions, a layer of thinly sliced and washed pots, a layer of tomatoes or cherries tossed anyway as shown. If you have some basil add it too underneath the toms, season heavily with sea salt and pepper. Pour in half a mug of water, Cover with foil and bake for thirty minutes, then grate Parmesan and sprinkle all over, and put back in the oven for another ten minutes. Last night I served this with a green salad from the garden. Sometimes simple is all you need.
