Better than Heinz, well almost and how to make the best cheese toasties ever


Okay it's lockdown and we've time on our hands so why not have a go at seeing if you can make tomato soup to rival the one you bought forever. It's easy and cheap to make - serve with an awesome cheese toasty. Comfort food sorted.

Start with frying some onions in a little olive oil for a few minutes until they start to go clear, add some chopped garlic and stir around for a minute or two then add stock, chicken or veg it doesn't really matter. Bring to a simmer. Then add a tin of chopped toms or a tin of not chopped toms, cut up a bit - it doesn't matter it's going to get blended anyway. Add a little chilli powder and a large spoon of paprika and salt and lots of pepper. And a handful of rice, this will be the thickening bit. Bubble away for about 30 mins. Turn the heat down.

Then blend and adjust for seasoning.

Mix in half a cup of milk or cream if you have some, this makes the soup a a bisque, apparently. And bubble away again for a few minutes.

Meanwhile sort your toasties out, grate the cheese - it has to be grated, and butter the bread on both sides that are exterior, none of yer posh bread wiv seeds in, just stuff that has no nutritional value, anyway let your frying pan get hotish and then cook on either side for a couple of minutes or until the cheese has melted and the bread is golden.

Serve to your astonished loved ones with a dash of milk or cream and some basil leaves. And with your clothes on.
