Stuffed Onions

An easy supper dish, very simple, very tasty.
Parboil some sliced potatoes, take the middle out of halved onions put them in a steamer over the pots. Finely slice the remaining onion.
Squeeze out sausage meat from three sausages, grate a couple of ounces of Parmesan, make some breadcrumbs, beat an egg, combine all and season. Stuff the mixture into the onion halves.
In a large dish put some sliced onions, a layer of potatoes, sliced tomatoes, and repeat, pour a dribble of olive oil all over, salt. Place the onions on top and cover with foil. Put into a 180 oven for about thirty minutes, and uncover for a few minutes or until browned and cooked.
