Pollo en Samfaina a la Catalana

Catalan Chicken with Aubergines, Courgettes and Peppers

In a little lard fry diced aubergine, until browned, fry diced peppers and courgette for a bit and put to one side.

Fry sliced onions and garlic and chicken pieces until browned, add white wine, tomato puree, thyme, bay and seasoning, simmer for approx half an hour then add the vegetables, cook for a further ten minutes and serve.
