Italian Style Leek Soup


This recipe is delicious partly from it's absolute simplicity.

Ingredients

Leeks
Flour
Chicken Stock
Parmesan
French Loaf

Method

Trim your leeks and in a several tbls of olive oil gently cook the leeks - slowly without frying them, could take a while, turn with a wooden spoon. Then add some flour, incoporate, then add some stock and cook gently until the leeks start to disintegrate.

Toast some slices of bread and arrange in a bowl and cover with the soup, then add Parmesan and pop into an oven for about ten minutes.
