Pörkölt Hungarian Stew Recipe
Pörkölt is a national dish of Hungary others include Goulash and Paprikas, and can be made with any type of boneless meat (pörkölt means to sear or roast) or even mushrooms, it is served with boiled potatoes, dumplings or large pasta, often with pickles on the side. Pörkölt is simmered very gently for a long time in only a small amount of water. Made with few ingredients, it's taste relies on the sweet paprika and caraway (pop into your nearest Polish shop and buy the spices - see pic)
Ingredients
3 rashers of bacon
1/2 lb Diced pork
Onions
Green Pepper
Tomatoes or tom puree
Bay leaf
Garlic
2 Tblsp sweet paprika
1 Tsp Caraway
1 tsp Marjoram/Oregano
Method
In a little oil fry your chopped bacon, then add the onions and when softened add the garlic, then the spices and the pork, stir fry for a few minutes then add the tomatoes or puree and the chopped green pepper. Then add a bay leaf and water to cover the mixture and allow to simmer gently for at least 90 minutes. Add more water as you go along. I served the Pörkölt with some simple mash.
Just great
