Chorizo in red wine recipe - how to make it like like they do in Andulacia

 


In the evening at the bar El Rincon, by the fountain in the square in Montejaque near Ronda, Andulacia you can enjoy many tapas and in particular a chorizo in red wine, and a few beers a Pacharán, a sloe flavoured liqueur, then more beers and more tapas. El Rincon is a Spanish bodega where the locals go, communication is in Spanish and sign language for visitors, just wonderful. I wish I was there again, 

Usually the chorizo in Lidl or Aldi is the cured version but occasionally they have the fresh version in the chilled section, Search chorizo in this blog and you'll find many recipes.

Ingredients

Chorizo fresh kept whole
Herbs - Bay. Thyme, Sage (or whatever you have, 
Thyme, Sage are optional).
Garlic a few cloves
Seasoning
Honey
Red wine preferably Spanish

Method
 In a little hot olive oil fry your garlic, whole, and chorizo until it starts to colour a bit and releases lots of lovely red fat, then add the herbs and stir around until you can smell them then add the wine to more than cover the sausages, bring to a simmer and add a tblsp of honey, turn down the heat and cook for about twenty minutes, you are aiming to reduce the sauce by half so you have a thicker sauce that has a lovely shine.

Serve with some bread and a good red Rioja.
