Spanish Potatoes with Pork Ribs and Chorizo Recipe | RECETA PATATAS CON CHORIZO Y COSTILLA

 


Spanish Potatoes with Pork Ribs and Chorizo Recipe is a traditional stew that's meant to warm you up, served with some bread and a glass of red wine and you'll agree, it's comfort food.

Ingredients:-
About six pork ribs
Half a ring of Chorizo 
Onion
Tom puree
Cherry toms
Garlic
Potatoes
Chestnut mushrooms
White wine
Red pepper
Thyme
Chicken stock

First in a little oil fry the the pork ribs until brown, also add the pieces of Chorizo, then remove. Add chopped onion and fry until clear also add the pepper and last the garlic (crushed). Then fry a splodge of tom puree add a tsp of paprika and then add a glass of white wine and reduce, 

Add stock herbs and toms, bring to a simmer and then add back the meat and simmer for forty minutes.

Next add the potatoes which should be cut in a Cascada method which means you put a knife into the potato and then break it, you will hear a snap, this is a traditional Spanish way to cut potatoes and it is usually used in stews, the irregular pieces release more starch which thickens the stew and the spuds will absorb more liquid.

Now add the mushrooms thinly sliced, some more stock and simmer until the pots are done. Check seasoning.

This stew is meant to be almost a soup, serve it with bread and enjoy the taste of Spain.
