Khoresh E Morgh - Persian Street Food - Iranian
Gheymey Khoresh E Morgh is a fantastic takeaway Persian street food, a dish of salty chips with a tasty tomato sauce and chicken - spices include dried lime, in the sauce a slightly crunchy dhal- it's great, everyone would devour this moreish dish.
Khoresh E Morgh isn't like a dhansak even though there is dhal. Unlike Indian recipes Persian dishes tend to be more delicate in their use of spices and usually have quite a lot of turmeric probably to give colour and detract from the err meat, but Turmeric is a super food these days, so maybe the Persians were ahead of the game. Iranian food is also distinctive in the use of ingredients such as dried limes, rose petals and Saffron, I suggest you look at my other Persian recipes and compile a shopping list and then enjoy visiting your favourite ethnic store
Ingredients for Khoresh E MorghChicken pieces 1lb
Oil
1 Onion
1 clove Garlic
Tom Puree
Tin chopped Toms
Dhal half cup, can be fried in a tiny bit of oil and then cooked
Chick Stock cube
Turmeric 1 tblsp
Cardamon 1/2 tsp seeds
Chilli powder 1/2 tsp
Cumin 1/2 tsp
Cinnamon 1/2 tsp
Saffron - pinch in boiling water
2 Dried limes, put a couple of holes in and put in a mug of boiling water for half an hour
Rose petals 1 Tblsp
Lime juice
Salt Pepper
MethodMake chips
Put your dhal in some water (no salt) and bring to the boil and simmer till soft - about 30 mins, then add to the stew ten or more minutes before serving.
Brown chicken pieces in oil and remove, add onions and fry till clear, then add chopped garlic then a minute later add a big squish of tomato puree and a minute later add back the chicken and move about till covered then add the spices, fry a minute and then add toms, add some water, then bring to the boil and then simmer for about 40 mins.
When you think all is ready.
Put the chips on top of the stew and drip some lime juice over them.
This dish like so many others is the reason I do this blog as I look for and find meals that are amazing that we would never ever come across.
