Persian Chilled Yogurt Soup Recipe

 

This Iranian chilled yogurt soup is one of the most beautiful dishes to look at and one of the most delicious dishes to eat, it's something that I have recently discovered and that I'll eat forever. On a hot day this refreshing bowl is served alongside toasted pitta bread for lunch or dinner.

You'll need:-

 A tub of a lovely Greek yogurt, just put it in a bowl and add a little water to dilute a bit.
Soak some sultanas in some hot water to swell up, leave ten mins then add with water.
Break up some Walnuts.
Skin and finely chop a cucumber into tiny cubes.
Handful of fresh herbs, I used dill/sweet cicerly, but mint is traditional, finely chopped. 
Splash of lime or lemon juice
Salt

Mix together, 

To top, if you have them, edible rose petals (I'd frozen in ice), and some chive flowers.

Just wonderful.
