Minestrone, with your own veg stock

 

Make yourself a great big pan of Italian goodness.

Use up vegetables and make your own veg stock with all the veg skins and some herbs, a bay leaf and some thyme, this stock is so good you'll make soup this way in future.

Soften the chopped onions and peppers in a little olive oil then add some garlic, then some tomato puree, then chop and add the harder veg like carrots and potatoes add a tin of chopped tomatoes and a little water and simmer. 

Your stock should also be simmering, after a few minutes add chopped cabbage, peel a courgette and chop, add chopped spring onions, add some of your stock to the pan and simmer, add a tin of drained chickpeas and more stock. If you have some Parmesan rinds add and later remove.

Simmer and season, serve when all cooked.
