Advieh e khoresh Recipe Persian Spice Mix

 


Advieh means 'spice' in the Persian language, and Advieh is a Persian spice mix that comes in various mixes it can be as simple as Rose petals, Cinnamon, Cardamon and Cumin that is sprinkled on a dish when about to be served in the same way as garam masala. In Iran Advieh is used in soups, stews and rice dishes it is mild and not spicy at all. Advieh recipes differ always and quantities vary.

Advieh-e polo - used in rice dishes (usually sprinkled over rice after the rice has been cooked) is Rose petals, Cinnamon, Cardamon and Cumin.

Advieh-e khoresh Recipe - used in stews or as a rub for grilled or roasted meats - only a couple of teaspoons are added.

In a dry frying pan gently heat and lightly brown cumin seeds, add cloves and star anise.

Spice mixture
1 Tblsp Turmeric
1 Tblsp Seseme seed
1 Tsp Fennel seeds
1 Tsp ground Cumin
1 Tsp Cinnamon
1 Tsp Funugreek seeds
1 Tsp Ginger powder
1 Tsp Cardamon seeds
1 Tsp Paprika
1 Tsp Coriander
1 Tsp Sumac
1 Tsp Ground Nutmeg
1 Tsp White Pepper
1 Tsp Nigella seeds
3 Cloves
1 Star Anise
1 Tblsp Rose petals

Not included dried lime as I didn't have any.

 Using a stick blender mix and blend all the above.
