Lentil Dijonnaise with smoked bacon and sausage

Love lentils?  Then this French bistro style dish is a must. This simple recipe makes a great quick supper, serve it to friends or family with baguettes and plenty of vin rouge.

Lentil Dijonnaise with smoked bacon and sausage ingredients:-

Some shallots
Some very thick smoked bacon slices, or smoked pork belly
Carrots
Dijon mustard
Cloves
Bay
Thyme
Garlic
Some good sausages
Lentils - I used brown, but puy lentils would be better as they should stay whole.
Butter


So rinse your lentils and put them on to boil, don't salt till it's almost ready by the way, peel the shallots and stick them with a clove, chuck in, throw in sliced carrots, the bacon or pork and the herbs, chopped garlic, pepper. Keep an eye as it simmers for about thirty five mins, salt if required, then add a tablespoon of Dijon mustard and mix well. Grill or fry your sausages. Serve and add a knob of butter to the centre of the lentils on the plate.

The mustard lightens the colour of the dish, the butter adds flavour and texture to the lentils but butter is an important addition to dhal and lentil dishes.
