Peas and Chicken alla Siciliana

I'd forgotten this recipe until watching an old episode of 'Floyd on Italy', his Sicily episode on You Tube. And, don't you know, I used to make this dish quite often, err about twenty years ago. And I haven't seen this recipe amongst the pages of any of my Italian cook books, and I have lots those, so it became forgotten and also I think, Dear Hector that Floyd simply made it up on the spot and it's not Italian or anywhere at all. However the Italians do love peas with their lamb so why would they not love them also with their chicken?

And fellow Gastronauts this is a half hour recipe that's very tasty.

So in a little olive oil and butter gentry fry some finely chopped carrots, bacon pieces, garlic and a bunch of spring onions, thinly slice a chicken fillet and throw in and slightly brown, then remove the chicken pieces and keep warm. Pour in a glass of white wine and deglaze and reduce a little, add a mug of chicken stock and then add lots of frozen garden peas. Simmer for a few minutes and when the carrot is cooked add a teaspoon of oregano, season and then add back in the chicken and cook gently for a few minutes, add half a mug of milk, mix, warm for a few minutes - do not boil, and serve simply with some nice rustic bread.
