Okra & Potato Curry, Bhinda Batata

 

This rather beautiful looking curry will reappear the next time I see okra in the Asian supermarket.

Wipe okra, slice lengthways, (never wet okra) cube pots, fry mustard seeds till they pop, add sliced onions and fry for a few minutes then add the veg, add salt, turmeric, chilli powder and ground coriander, mix well. Cover and reduce heat, stir every few minutes for about half an hour. Add chopped tomatoes and continue for a further fifteen minutes.
