Panzanellia



Panzanellia is an Italian summer salad, it's a great use up dish, and the ingredients are a bit of what is lying about.

The technique is standard tho, take some bread thats either gone a bit stale, or the end of some nice bread that's a bit soft, the above was made with some leftover jalapeno bread. Either way if the bread is dry, wet it with some water, then squeeze the water out and/or crumble into small bits.

Chop an onion or spring onion finely, chop a cucumber finely, chop tomatoes, add some chopped peppers, olives, garlic too if you'd like, few basil leaves. Combline the lot, add a glug of olive oil, a tablespoon of red wine/balsamic vinegar will do, salt and mix well. Put in the fridge to chill for a while. Enjoy
